Locking all stats but the one(s) you want to gain is the best method. INT elixers are very cheap, just buy enough to cap that one. Also of note, just because you are able to gain a state increase doesn't mean it will happen right away, it could take 10-15 minutes to actually gain that stat.

The easy solution, have true sight mobs that are too OP for 1 player to fight them. True sight means they see through hiding/invisible. Have them wander around the Titan Spawns. Could go 1 step further and give them whirlwind attack with poison...

While mounted you can go greatly over your weight limit and still be able to move for a short time. Summon a gateway. You can pick up the item and carry it with you through the gateway.
