Hi, I need to raise my strength by 3 so that I can start chopping down trees to make my own arrows, anyone know of an quick and easy way to do this? I've tried fighting hand to hand and with weapons, but it only raises my swordsmanship or wrestling.

You get stat gains one every 15 minutes at the most.

I've found that the easiest way to get stat gains is to lock the one(s) you don't want raised and wrestle in the training room before you go to bed.

When you say befor you go to bed, do you mean - set it up and then use an assit tool like Razor. Is that legal? I'm not fure if I want to use an assit tool yet if that is what you mean. I guess this is for another thread, but I know that UOEX does allow assist tools for certain thinngs.

Yes, he means leave it at the training room AFK bashing the training NPCs. This is legal. Stats go up once every 15 minutes (tops) so you have to be patient. It takes a few days to get a char up to top stats (max 300 total).
I also recommend what Blaze says. Lock two stats and leave one up and let him wrestly those NPCs. For INT I prefer a knowledge skill like Evaluating Intelligence, but that's me. INT goes up even when fighting.
Keep in mind that your 3 points of STR will go up in a minimum time of 30 minutes plus whatever it takes to get the first increase.
EDIT: By the way, using Razor is legal and practically encouraged. I'm pretty sure it can prevent carpel tunnel syndrome, lol.
